Gone Fishing

Are you a summertime fisherman? Do you have fish from last summer’s catch in your freezer? Here is a very easy recipe to bake any kind of fish filets. It’s ready to eat in about 20 minutes and is SO good for you. I freeze fish filets individually or with plastic or freezer paper in between layers so I can take out only what I need.

4 fish filets (about 1 pound total)

salt

paprika

4 thick tomato slices (about 3/4″ thick)

1 Tblsp fresh or dried chives

Pinch of dried tarragon

1/3 cup bottled or homemade Italian salad dressing

1/2 cup shredded mozzarella cheese

1 tsp snipped fresh or dried basil

Preheat oven to 425 degrees.

Place fish filets, still frozen, in an ungreased 9″x13″ baking dish. Sprinkle lightly with salt and paprika.

Top each filet with a slice of tomato, then sprinkle on the chives and tarragon.

Drizzle the Italian dressing over all.

Bake uncovered for 10 minutes. Then sprinkle grated cheese and basil over filets and return to oven, uncovered, for another 10 minutes.

Fish is done when it flakes easily with a fork.
